I have had frog legs plenty of times, but I have never eaten a whole frog. I think that is why this recipe intriguers me. It offers a new spin on a old favorite and of course there is bacon so what is not to love about that?

Bacon Wrapped “Ribbits”

Ribbit (plural Ribbits)
Noun – The vocal sound made by a frog.

INGREDIENTS:
4 whole frogs, cleaned
1 Apple, peeled, cored and cut in quarters
8 hot peppers of your choice
Bacon
Cast Iron Skillet

FOR THE BASTING SAUCE:
Butter – 1 stick
Ground Black Pepper – 1 Tbs
Shallot – 1 minced
Pickled Peppers – To Taste

DIRECTIONS:

GETTING READY:
1. Set up your grill for direct grilling – medium heat
2. Place ¼ of an apple into the body cavity of each frog
3. Wrap each frog in 2 slices of bacon
4. Place 2 hot peppers into the mouth of each frog

MAKING:

THE BASTING SAUCE:
Place the skillet on the grill and add the basting sauce ingredients and “simmer”.

COOKING:
Place the frogs directly over the coals.
Continually baste until done cooking.
Frogs are done when the bacon is cooked.
